What's the best surface for frying pans?

"I have a healthy fear of non-stick pans but wouldn't mind making a waffle on something other than cast iron.  I am curious what other families do in this area.  How to avoid it/alternatives?  How bad is it really?  If you'd be willing to post a question along these liens, I'd love to hear what people think are doing.  Thanks!"
