Rooting it out

Dscn0474_2 I'm drowning in onions, shallots and potatoes. Every Sunday I get a few more in my CSA bin, and while I try to foist them off on Renee, she's putting up a good fight. Hence, a gaggle of onions mock me on the counter. The potatoes sprout ears. I like to cook with these foods (and the kids love potatoes), but I just can't keep up. (It's like the Sorcerer's Apprentice...everytime I chop up one onion it multiplies into 20.) What is the best way to preserve these precious root veggies? A root cellar? And what does that involve? Could a kitchen drawer suffice?

Better yet, can you suggest a kid-approved recipe that involves lots and lots of onions and potatoes?
