If you're responsible omnivores like us, you try really hard to buy only drug-free, pasture-raised meat, despite how expensive it is. While this is good, a scant percentage of the population is doing this. Small meat farmers could not produce enough meat to support the US population's consumption of it, which is why we all need to eat less meat (and take a bite out of the bottom line of the industrial meat producers).
So while we're not hoping to turn everyone into a vegetarian, we do think most families could lessen their consumption of meat, and go meatless at least one dinner a week. We launched the EnviroMom Meatless Supper club in fall 2009. Joining forces with 9 talented guest bloggers, we presented 10 family friendly vegetarian dinner recipes, once a week over an 8-week period. Here's a recipe list for your convenience:
